Watermelon Cucumber Salad
Spice up your watermelon with this fresh take of added cucumber and tajin. Produce is an excellent way to sneak in a little extra hydration and there is none lacking here through the watermelon and cucumbers. Add this side dish to your next bbq or outdoor eating experience.
What You Need
1 Medium Cucumber
½ small Seedless Watermelon (about 3 cups cubed)
¼ bunch of Cilantro
1 Lime, zested and juiced
½ Tbsp. Tajin
2 oz Cotija Cheese
How It’s Made:
- Slice cucumber in coins about ½ inch thick and add to a large bowl
- Cube watermelon into ½ – 1 inch pieces and add to bowl
- Mince cilantro
- Add lime juice, lime zest, tajin, cilantro and toss together to combine
- Garnish with cotija cheese
