Fast & Flavorful Vegan Nachos

Becoming a health-conscious eater doesn’t mean you have to kiss your most beloved cravings goodbye! Say “yes” to comfort food with our recipe for Fast & Flavorful Vegan Nachos.
WHAT YOU NEED:
- 1 bag Beanitos Chips
- 1, 10 oz frozen bag cauliflower rice
- 1 cup walnuts, roughly chopped
- 2 tbsp olive oil
- 1 tbsp garlic powder
- 1 tbsp cumin
- 1 tsp dried oregano
- 1 lime, zested and juiced
- 1 onion, chopped
- 2 tbsp sauce from a can of chipotles in adobo
- 1, 12 oz pkg arugula
- 1 pkg DaiyaⓇ cheese
- 1 bunch Cilantro
- 1 Avocado
- Additional toppings: pico de gallo, green onions, jalapeños, black beans, sliced radishes
HOW IT’S MADE:
- Microwave cauliflower per package instructions
- Place 2 Tbsp olive oil in a pan along with all of the spices, lime zest and sauce of chipotles in adobo
- Stir in ½ of the onion and sauté for 3 minutes
- Add in walnuts and cauliflower rice
- Add in the rest of the onion to incorporate
- Build nachos: 13 chips, 1 handful arugula (about 1 cup), ¼ of the cauliflower mixture, ¼ cup Daiya cheese
- Heat in microwave for 1 minute to melt cheese
- Top with any additional toppings of your liking
