Tot Tuesday

It’s tot Tuesday! Ok, that’s not a thing but today it is. We’re talking all things tater tots! Potatoes in general tend to get a bad wrap and while we understand the concern let’s get one thing straight, they are delicious and nutritious foods. 

 

Did you know that potatoes are a better source of potassium than bananas when eaten with the skin? Not only that but they are naturally fat free, cholesterol free, and low in sodium. They are an excellent source of vitamin C and good source of fiber. Portion size is something to be aware of here so sticking to about ½ cup cooked is considered a serving. Even though it’s a starchy vegetable it still counts toward your total recommended goal of 5 servings a day. 

 

Here are some ideas we’ve been cooking up lately to start off our memorial day strong:

  • The hash brown patties found in the freezer section are perfect to be cooked in your airfryer on 400 degrees for 13 minutes 
  • They make the perfect accompaniment to a breakfast has, frittata, or casserole. You can mash them or leave them whole and mix them with just about any chopped vegetable and eggs
  • Take a mini muffin tray and place one tot in each and bake according to package directions. Then pull it out and “smash” the tot and fill it with an egg and veggie mixture and back in the oven it goes until the egg is set.
