Stuffed Poblano Salad
Stuff your next poblano full with these hearty flavorful veggies for a satisfying entree or side dish.
What You Need
- 4 Poblanos
- 1 can Corn
- 1 can Low-Sodium Black beans
- 1 Tomato
- 1 can Green chiles
- 1 medium Avocado
- ½ bunch Cilantro
- ½ small Red onion
- ½ mango
- 4 oz. Cotija cheese
How It’s Made:
- Preheat oven to 350 degrees
- Line baking sheet with aluminum foil and place poblanos on it to cook for 20 minutes
- Drain and rinse corn and black beans
- Dice tomato, avocado red onion and mango all to the same size
- Mince cilantro
- Mix corn, beans, tomato, chiles, avocado, cilantro, red onion, mango, and cotija cheese all in a bowl
- Pull poblanos out of the oven and slit open with a sharp knife
- Stuff with mixture evenly among the 4 and return it to the oven for 5 minutes
- Serve hot or cold
