Strawberry Biscuits with Honey Thyme Compound Butter
Sweet with a touch of savory coming in with these delicious scones. With only a touch of added sugar these scones bake up deliciously golden and are perfect to be enjoyed with a cup of coffee, or as dessert.
What You Need
- 2 c. strawberries, diced
- 2 ½ c. Flour
- 2 Tbsp. Sugar
- ½ Tbsp. baking powder
- ¼ tsp. salt
- 6 Tbsp. cold Butter, cubed
- 1 Egg
- 1 lemon, zested and juiced
- 1 c. milk
- 6 Tbsp. room temperature Butter
- ¼ tsp. Salt
- 2 Tbsp. Thyme
- 1 Tbsp. Honey
How It’s Made:
- Preheat oven to 375 degrees
- Sift together dry ingredients
- Add butter in a incorporate until pea sized with pastry cutter or forks
- Add in egg and milk and stir until loosely coming together
- Add in strawberries and combine but do not overmix
- Lightly dust a clear surface with flour and turn out dough to knead for 1 minute
- Form into a circle and roll out to ½ to ¾ inch thickness
- Cut like a pizza into triangles
- Bake for 35-40 minutes
- In a separate bowl combine 2 Tbsp. butter, salt, honey and thyme
- Spread onto scones once cooled
