Pork Chili
Say scrumptious to our Texas Pork Chili! Now normally, we love to throw in delicious beans as they have a great amount of flavor and nutritional value to them but we decided to keep it low carb today! This Texas chili is perfect as the weather starts changing, a fall football tailgating day or just because!
What You Need
1 lb. lean ground pork
6 pieces of Bacon
4 c. Beef Broth (or bone broth which is what we used for more protein)
1 small Onion
2 red bell pepper
1, 15oz can diced Tomatoes
1, 15oz can Mild Rotel Tomatoes
3 Tbsp. Chili powder
2 Tbsp. Paprika
1 Tbsp. Cumin
Salt and Pepper as desired
Optional toppings: green onion, cheese, greek yogurt, black bean chips
How It’s Made:
- In a medium pan over medium-high heat, cook bacon until slightly crispy
- Dice onion
- Dice bell pepper
- In a large pot over medium-high heat, saute onion and bell pepper for 5 minutes
- Add in ground pork and cook until browned through
- Crumble bacon
- Add diced tomatoes, rotel, chili powder, paprika, cumin, beef broth and bacon and sitr
- Let flavors combine for 5-10 minutes
