Mini Salmon Burgers

What You Need
1 lb fresh salmon, boneless and skinless
2 tsp dijon mustard
1 small shallot
¼ c. bread crumbs
1 egg
½ medium cucumber
1 head lettuce
3 Tbsp. greek yogurt
1 Tbsp. dijon mustard
6 slider buns
How It’s Made:
- Heat a medium skillet on medium-high heat
- In a food processor combine the mustard, shallots, egg and breadcrumbs
- Add in salmon and lightly pulse about 6-8 times or to desired consistency
- Form into 6 patties and cook in pan until internal temperature reads 145 (about 4-6 minutes per side)
- Thinly slice cucumber
- Tear lettuce leaves into individual pieces
- Take 1 lettuce leaf and fold it over on itself until it fits on the buns
- Place a patty on top
- Mix together greek yogurt and dijon mustard and spread on top bun
- Put 2 slices of cucumbers on top and top with bun
