Easy Breakfast Casserole
Morning casseroles are our jam during a crazy winter season. They make the weekend mornings more smooth, when made ahead or reheated and get the whole family off on the right foot.
What You Need
6 Whole Eggs
6 (or ¾ c.) Egg Whites
1 lb. Frozen Spinach, thawed and squeezed
2 oz. Goat Cheese
½ lb Hot Italian Sausage
½ Medium Onion
3 Cloves Garlic
1 Tbsp. Olive Oil
¼ c. Ultrafiltered Fat Free Milk
Salt and Pepper as Desired
How It’s Made:
- Dice onion
- In a medium to large cast iron skillet heat oil
- Add garlic and onion and saute for 5 minutes
- In a bowl whisk together the milk, eggs, and egg whites
- Preheat oven to 350 degrees
- Add spinach to pan and mix
- Pour in egg mixture and quickly stir once around the pan to evenly incorporate
- Crumble goat cheese pieces around the pan and place in oven
- Bake for 17-20 minutes or until eggs set
