Budget Friendly Recipes

The average out-to-eat dinner meal costs $15 per person. For that same amount of money you could feed a family of 4 just by changing the habit of planning out your week while still preparing for the last minute events! Here are some of our weeknight budget friendly meals that help stretch our dollar a little further:

Beef and Salsa Tacos

  • 1 ½ lbs lean ground beef
  • ½ tsp ground cumin – Signature Kitchens ground cumin
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 pkg frozen chopped spinach thawed & drained – Signature Kitchens frozen spinach (10oz)
  • 1 ¼ cup salsa – Signature Select Mild Chunky Salsa (16oz)
  • 1 cup reduced fat cheddar cheese – Lucerne Reduced Fat Shredded Sharp Cheddar Cheese
  • 16 corn tortillas – Mission Street Tacos Corn Tortillas

Southwest Egg Rolls

  • 2 cups frozen corn, thawed – Signature Kitchens Whole Kernel Corn

Creamy Lemon Pasta

  • One box Banza penne pasta
  • 2 lemons, juice and zest
  • 2 garlic cloves

Mediterranean Pasta

  • One box Barilla whole grain pasta elbows
  • 2 roma tomatoes, diced

Healthy Tuna Veggie Salad
