Byond Ground Beef and Zucchini Tamale Pie
No meat? No problem! This plant based tamale pie is one for the whole family to enjoy with a medium spicy kick!
What You Need
- 1 lb. Plant-based Ground meat
- 2 medium Zucchini
- 5oz Shredded carrots
- 1 can Corn, no salt added
- 3 Tbsp. Taco seasoning
- 1 box jalapeno Cornbread
- 1 Egg
- ⅔ c. Milk
How It’s Made:
- Preheat oven to 350 degrees
- Brown the plant-based meat and remove from pan
- Chop zucchini and add to saute pan
- Add in carrots, zucchini, and taco seasoning
- Once vegetables are soft, add back in the impossible beef and combine
- Make cornbread according to package directions and add in one can of corn
- Place mixture in an 8×8 pan
- Place cornbread on top
- Bake for 35 minutes
