Sage Cauliflower Sausage Kale Soup
Appetizers don’t always need to be finger food. Try this upscale and super simple cauliflower kale sausage soup perfect to warm up your guests this holiday season.
What You Need
1 Tbsp. Olive oil
1 lb. Hot Italian Sausage
2 cans beans of choice
1 medium Onion
3 cloves Garlic
1, 0.5oz pkg Fresh Sage
1 tsp. Dried Sage
1 large head Cauliflower
4 c. Chicken Bone Broth
2 c. water
1 bunch Kale, roughly chopped
¼ tsp. Red pepper flakes
Salt and pepper to taste
How It’s Made:
- Preheat oven to 450
- Dice onion and cauliflower into small pieces and spray lightly with olive oil
- Roast cauliflower for 30-40 minutes
- Puree in blender with 1 cup chicken broth until smooth
- In a large stock pot heat oil
- Brown the sausage
- Mince garlic and fresh sage
- Add in onion, garlic, and sage to cook for 5-10 minutes
- Drain and rinse canned beans
- Add in cauliflower puree, chicken broth, water, beans, kale, and red pepper flakes and let flavors meld together for 10-15 minutes minutes
