Blender Chocolate Banana Oat Muffins
Prepping these muffins couldn’t be any easier with blending the ingredients in a blender for a quick and delicious meal prepped breakfast
What You Need
- 4 Medium overripe Bananas
- 3 Eggs
- 1 c. Peanut Butter
- 2 Tbsp. Vanilla Extract
- ¾ c. Maple Syrup
- 1 ½ c. Banana Milk
- 4 c. Oats
- 1 ½ c. dark chocolate cocoa powder
- 16 scoops Vital Protein Collagen Powder
- 1 tsp Baking Soda
- 1 ½ tsp. Salt
- ½ c Peanut Butter Chips, plus more fo topping
How It’s Made:
- Preheat oven to 350
- In a blender combine bananas, eggs, peanut butter, vanilla extract, maple syrup, banana milk and blend for 1 minute
- Add oats, cocoa powder, collagen powder, baking soda, salt and blend for 2 minutes scraping down the sides as needed
- Stir in peanut butter chips
- Line muffin tins with liner
- Fill the liner ¾ of the way full
- Top with peanut butter chips
- Bake for 35 minutes. To test for doneness, toothpick should come out almost clean but not entirely
- Place on a wire rack to cool completely
