Savory Indulgent Zucchini Bread
It’s national zucchini bread day! We love our carbohydrates and this recipe isn’t replacing any of them, but rather keeping this “soda” bread most with a crunchier crust.
What You Need
- 1 c. Zucchini
- 1 c. Cheddar
- 4 slices Bacon
- 2 c. White Flour
- 1 c. Whole Wheat Flour
- 2 Tbsp. Honey
- 4 Tbsp. Butter
- 1 Beer IPA
- 1 Tbsp. Baking powder
- 1 tsp. Salt
- 3 cloves Garlic
- 1 pkg. Chives
How It’s Made:
- Preheat oven to 350 degrees
- Line a mini loaf pan with parchment paper and lightly spray with cooking spray
- Cook bacon per package directions
- Grate zucchini
- Grate cheese
- Mince garlic and chives
- In a bowl combine flour, baking powder, salt and mix together
- Melt butter and add in honey to incorporate
- Pour beer into dry ingredients and mix well
- Pour in butter mixture
- Add in garlic, chives, bacon, zucchini and cheddar cheese and mix until roughly incorporated
- Bake for 45-50 minutes and let cool in pan
